Shirataki Frittata
Heat the over to 350 degrees
Ingredients:
1 package of frozen spinach
1 package Shirataki noodles (be sure to rinse them then drain and cut into thirds)
1 package of egg substitute (8oz) such as egg beaters or you can use 2 beaten eggs
1 cup of feta cheese, preferably part skim
Put it all together:
Microwave the noodles for one minute in a microwave safe bowl then place the noodles into a large bowl where you will add the spinach, the cheese and the egg. Be sure to coat an 8" baking dish with cooking spray then pour the mixture into the baking dish.
Cook for 30 minutes in the oven then shut off the oven and let the frittata sit in the oven for 15 minutes or until the sides are crispy and dark. This will serve six and is a meal even your kids will love.
